My risotto!!

A good risotto..!

I always appreciate a good risotto, but I do not find it often ...
It needs to be creamy but also just a little bit al dente.
It needs to be flavorful, but without too much spices
.
It can have a variety of base ingredients, I like (and know how) to cook the below

  • vegetable risotto
  • zucchini risotto
  • mushrooms risotto
  • chicken risotto
  • shrimp risotto (for some reason this I dont make very tasty but I will work on it)

I still remember the most tasty ever risotto that I tried in Athens, but I liked it too much to take a photograph, was also too ashamed to go ask for the recipe...

This risotto is made with:
rice (carolina)
freshly chopped onion
chicken
fresh mushrooms
salt
--- at the end I have put
fresh parsley
just a pinch of pepper (freshly grated is the best)
parmesan (can be flakes or grated)
And just a little bit of a fresh lemon squeeze
yum

So, if you are reading to the end, please tell me, how do you feel about rice in general?
How do you prefer it?
